Today, I am sharing with you my ultimate healthy diet mixed vegetable soup. I love to replace one of my meals with this mixed vegetable soup whenever I have consumed too many calories in a day. I calculated my daily calories with a mobile app, MyFitnessPal, I find it very useful to track my calories intake and calories exhausted.

Because of this little change, I have heard feedback from my friends and relatives that I look slimmer and toned, my skin and complexion are glowing, and I obviously look a few years younger than before. I have lost about 15 pounds in 3 months by drinking at least 8 cups of good quality water, eating healthily, and adjusting my lifestyle to get a balance between work, rest, and exercise (I am still trying my best to achieve my goal).

In fact, I am able to lose weight at a faster rate by crushing my diet and pumping up for more cardio exercises, but I am looking for a healthy and sustainable way, so I prefer to do it in long-term by changing my eating and drinking habit coupled with regular exercise.

I have heard people lost 10 pounds or more a week by doing all those extreme dieting plans, unfortunately, I also heard many of them cannot sustain this kind of lifestyle and they eventually put back the weight, and, some could be more than what they have lost.

This soup is easy to prepare and it is about 120 calories per serving of about 2 to 3 cups volume, it is very filling and you will hardly feel hungry in hours. Research has shown that Cabbage based soup diet can help to burn fat faster especially on the belly area, and this is the problematic area that I am targeting.

After long hours of sitting on the chair to do the crafts and developing tutorials…. the belly really needs more attention especially after giving birth to my 2 kids.

When we talk about good quality water for drinking and cooking, first of all, the water must be clean, that’s for sure. Secondly, the water must be free from harmful water-borne bacteria and parasite cysts, dissolved metal and chemical, for example, calcium and chlorine. In order to get the best water to drink and cook, I used the 3M Advanced Drinking Water Filter System (DWS2500T-CN) for my daily consumption. Recipe: Mixed Vegetable Soup

Serves 4
Calories: approximate 117 calories per serving
Prepare Time: 15 minutes | Simmering Time: 30 to 45 minutes

Ingredients:
1/2 medium-size cabbage (white and purple), diced
1 big Yellow Onion, diced
3 big tomatoes, remove inner flesh, diced
1 red/green capsicum, diced
4 bay leaves, dried
3 cloves garlic, chopped
2-inch ginger, sliced
1 small bunch of scallions, diced
1/2 Tbsp olive oil
1/2 teaspoon salt (optional)
4 cups filtered water (I used 3M filtered water)

Method:

1. Soak and wash all the vegetables with filtered water for at least 15 minutes. Cut the ingredients accordingly.
2. Saute garlic and onions in a pot until fragrance and onions are soft
3. Add filtered water into the pot.
4. Add in all the vegetables, bay leaves, and ginger. Close the lid and bring it to a boil. Reduce to low heat and simmer until the cabbage is soft.
5. Add salt to taste.
6. Sprinkle with diced scallions and serve it hot.
